Christmas cheesecake

    All the lovely flavours of Christmas, baked into a luscious cheesecake! This is a fab way to use mincemeat.

    Serves: 10 

    • Base
    • 125g digestive biscuit crumbs
    • 90g melted butter
    • 1/2 teaspoon ground cinnamon
    • Filling
    • 500g cream cheese, softened
    • 150g sugar
    • 3 eggs
    • 175g mincemeat
    • 1 dessertspoon rum or brandy

    1. Combine base ingredients and press into 20cm springform tin. Refrigerate while making filling.
    2. Beat cream cheese and sugar till smooth. Add the eggs, one at a time; stir in mincemeat and rum or brandy. Spoon mixture over chilled base.
    3. Bake in a preheated 160 C / Gas 2-3 oven for 1 hour, or until firm. Cool with oven door ajar, then chill in the fridge overnight.
