Crunchy broccoli salad

    A unique broccoli salad that's perfect for a garden barbecue or picnic. The crunch of the broccoli is a nice change of pace!

    Serves: 7 

    • 225g streaky bacon
    • 200g mayonnaise
    • 4 tablespoons sugar
    • 2 tablespoons cider vinegar
    • 900g fresh broccoli, cut into 2.5cm pieces
    • 225g grated Cheddar cheese
    • 1 small red onion, chopped
    • 5 tablespoons sunflower seeds
    • 5 tablespoons dried currants

    1. Place bacon in a large, deep frying pan. Cook over medium-high heat until evenly browned, 7 to 10 minutes. Drain, chop and set aside.
    2. Combine the mayo, sugar and vinegar. Set aside.
    3. Combine bacon, broccoli, cheese, onion, currants and sunflower seeds in a large bowl. Pour dressing over salad. Toss to coat. Chill for a few hours before serving for best flavour.

    Nice crunchy broccoli salad! I made a few tweaks to suit my taste and what I had in the fridge: 1 pkt bacon (275g) 80g mayonnaise 2 tbs brown sugar 4 tbs spirit vinegar 3/4 tsp dijon mustard 1 small onion, finely chopped 3 broccoli heads cut into bite sized pieces I left it in the fridge overnight and had it for lunch the next day - lovely!  -  14 Aug 2015
