Easy tea loaf

    Mixed fruit is soaked in black tea the night before making this tea loaf. Chopped nuts can be added if you like and you can use any type of dried fruit you prefer.

    Makes: 1 tea loaf

    • 450g dried mixed fruit
    • 250ml black unsweetened tea
    • 1 egg
    • 220g soft brown sugar
    • 250g self raising flour

    1. Place dried fruit in a large bowl; pour in black tea and soak overnight.
    2. Preheat oven to 180 C / Gas 4. Lightly grease a loaf tin.
    3. Add egg, sugar and flour to soaked fruit; mix well and spoon mixture into prepared loaf tin. for about 90 minutes.
    4. Bake in preheated oven for 1 1/2 hours; cool cake on a wire rack.
