So easy, especially since the slow cooker does all the work! This is a lovely, comforting soup to come home to on a blustery evening.
You don't have caramelise the onions, you can simply melt the butter in your slow cooker, add the onions to coat them and then add all the ingredients and cook. However, caramelising the onions makes for a much, much better soup.
Why not use the slow cooker to caramelise the onions first - overnight on low, onions, butter in the slow cooker - then add the remainder of the ingredients the following morning? - 28 Sep 2014
Used English onions and red wine instead of sherry (someone had drunk the sherry) ! It tasted divine, just like a posh restaurants. I will definitely make it again without a doubt. - 02 Feb 2013
