Black olive and goats cheese muffins

    I have recently fallen in love with savoury muffins and this is the latest of my creations.

    Makes: 12 muffins

    • 250g plain flour
    • 3 tsp baking powder
    • 1 tsp salt
    • 1/2 tsp cayenne pepper
    • 50g softened butter
    • 50g black olives
    • 50g crumbled goats cheese
    • 1 egg
    • 120ml milk

    Prep:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Sieve the flour, baking powder, salt and cayenne into a bowl and add the butter. Rub the butter well in.
    2. Stir in the egg and then the milk to a stiff consistency. Mix in the finely chopped olives and the crumbled goats cheese.
    3. Divide into muffin cases in a tin and then bake in a preheated oven at 200C for 25 minutes.


    Delicious when served with a warming soup on a cold winter's night.

    Sorry i didnt think this recipe was very good. They tasted ok when you got a bit of olive or cheese but the batter mix was very bland and tasteless otherwise  -  06 Apr 2015
