My mother and grandmother used to make this traditional Chinese sweet when I was little. It just brings back all the precious old memories. So simple and sweet! Maltose is available online or in some Asian supermarkets.

Ingredients

250g peanuts
100g sugar
60g maltose (malt sugar)
30ml vegetable oil

Preheat the oven to 150 C. Scatter the peanuts on a baking tray and roast for 25 minutes. Rub them gently to remove any skins.
Place sugar in a saucepan, pour in enough water to cover the sugar and simmer for 20 minutes. Add the maltose. When the maltose has dissolved and the water has evaporated, stir the syrup until thickened. Stir in the oil and mix well.
Stir in the peanuts, working quickly. Pour onto a lightly greased baking tray immediately and flatten. Let slightly cool before cutting into small rectangles. (You might need to rub the knife with a little sesame oil to prevent sticking). Let cool and enjoy!
