Dried shrimp and oyster mushroom soup

    Oyster mushrooms are rich in protein, fibre and multiple vitamins. They are used a lot in Chinese cooking, especially in autumn and winter, as they are believed to promote childrens immunity. You can find dried shrimp in the tinned fish aisle of most large supermarkets.

    Serves: 2 

    • oil for frying
    • 1 teaspoon freshly garted root ginger
    • 5 or 10g dried shrimp
    • 1 diced tomato
    • 800ml water
    • 150g oyster mushrooms
    • 70g bean sprouts
    • 1 teaspoon salt, or to taste
    • 10ml sesame oil

    1. Heat a little oil in a hot wok, sauté the ginger and dried prawns until fragrant. Add the tomato and stir-fry until soft. Add water and bring to the boil.
    2. Add the oyster mushrooms and cook for 10 minutes. Add the bean sprouts and boil for a few minutes until cooked. Season with salt, sesame oil and serve.
