About this recipe: This is a meaty and flavourful Chinese soup made with pork ribs, fresh root ginger, tomatoes and lotus root. You can find fresh lotus root at most Asian supermarkets. You can also used tinned lotus root.


Serves: 4 

  • 400g pork spare ribs
  • 3-4 large slices fresh ginger
  • 2 tomatoes, chopped
  • 1 lotus root, chopped

  1. Soak the ribs in cold water for 10 minutes; rinse well. Place the ribs into a pot of fresh cold water, bring to the boil, skimming off any foam from the top.
  2. Remove the ribs and place in a fresh pot of boiling water. Add ginger, cover and simmer for 1 hour.
  3. After an hour, add the tomatoes and simmer for 30 minutes. Then add the lotus root and continue to simmer for 40 minutes. Season with salt and serve.
