Stir fried Chinese beef

    Tender beef slices and crunchy Chinese broccoli or kale are stir-fried in a savoury ginger sauce. Easy to make, pretty healthy and everybody loves it!

    Serves: 3 

    • 200g beef strips
    • 3/4 teaspoon sugar
    • 1 1/4 teaspoons chicken stock granules, divided
    • 1 tablespoon ginger juice (squeezed from root ginger or from a jar)
    • 1/4 teaspoon sugar
    • 1 teaspoon cornflour mixed with 2 tablespoons water
    • 1 tablespoon oil
    • 20g root ginger, peeled and sliced
    • 400g Chinese broccoli or kale, sliced
    • 2 tablespoons water
    • 1 tablespoon water
    • 1 tablespoon oil

    1. Toss beef strips in 3/4 teaspoon of sugar and 1 teaspoon chicken stock granules. Set aside and let marinade.
    2. Mix ginger juice, remaining 1/4 teaspoon of chicken stock granules, 1/4 teaspoon of sugar, 1 teaspoon of cornflour mixed with 2 tablespoons of water in a bowl; stir well.
    3. Heat 1 tablespoon of oil in a preheated wok, sauté the ginger until fragrant. Add the broccoli and stir-fry for 2 minutes. Add 1 tablespoon of water, cover with a lid and let cook for 1 minute. Remove and set to one side.
    4. Heat another tablespoon of oil in a preheated wok; add the beef and stir-fry until cooked medium well. Add the Chinese broccoli, ginger juice mixture, stir well and serve.
