Chinese chicken and sweetcorn stir fry

    Chicken thighs are diced and stir fried with sweetcorn, red pepper, garlic and ginger in this Chinese main dish that is super easy to make.

    Ingredients
    Serves: 3 

    • 2 tablespoons corn or vegetable oil
    • 2 slices fresh ginger, minced
    • 2 cloves garlic, minced
    • 3 skinless, boneless chicken thighs, diced
    • 1 tin sweetcorn, drained
    • salt and freshly ground black pepper to taste
    • 1/4 red pepper, sliced
    • 2 spring onions, sliced
    • 1/2 teaspoon salt, or to taste
    • 1/4 teaspoon chicken stock granules, or to taste

    Method

    1. Heat the oil in a wok, add the ginger and garlic; cook and stir until fragrant, about 1 minute.
    2. Add the chicken and stir-fry until crisp on the outside but not cooked through, about 5 minutes. Add the corn and continue to stir-fry until the chicken has cooked through. Add the red pepper and spring onions; stir well. Season to your taste with salt and chicken stock granules. Serve over rice.
