2 slices fresh ginger, minced
2 cloves garlic, minced
3 skinless, boneless chicken thighs, diced
1 tin sweetcorn, drained
salt and freshly ground black pepper to taste
1/4 red pepper, sliced
2 spring onions, sliced
1/2 teaspoon salt, or to taste
1/4 teaspoon chicken stock granules, or to taste

Heat the oil in a wok, add the ginger and garlic; cook and stir until fragrant, about 1 minute.
Add the chicken and stir-fry until crisp on the outside but not cooked through, about 5 minutes. Add the corn and continue to stir-fry until the chicken has cooked through. Add the red pepper and spring onions; stir well. Season to your taste with salt and chicken stock granules. Serve over rice.
