Mix sesame oil, soy sauce, sugar, pepper in a bowl; mix well. Stir in sliced chicken and marinate in the fridge for at least half an hour.
Heat some oil in a pan; add ginger and stir-fry until fragrant. Add chicken and continue to stir-fry for a few minutes. Add rice wine and stir-fry until the chicken is cooked. Stir in a little salt. Add papaya and cook until it becomes soft and tender. Season to taste with pepper; stir well and serve.
Do not use too ripe a papaya or the dish will be mushy.
