250g cold cooked rice
2 egg yolks
1 tablespoon oil
1/2 carrot, diced
1/4 onion, diced
1/2 cucumber, diced
salt to taste

Pour egg yolks over the rice, stir well and coat the rice with yolks.
Heat the oil in a wok over high heat, then add the rice and stir-fry until the rice is individually separated, loose and does not stick together. Add the onion and carrot, and stir fry for 2 minutes. Add the cucumber and salt, then stir well and serve.
