A hearty split pea soup that's thick and smooth, made with leeks, potatoes, carrots and onions, with the outer leaves of a cos lettuce that makes the difference. Freeze leftovers for a filling meal anytime!

450g (1 lb) green split peas
2 large onions
the outside leaves of 1 cos lettuce
salt and pepper, to taste

Clean and slice leeks. Peel and dice potatoes and carrots. Rinse and sort split peas. Dice onions and rinse lettuce leaves.
Combine all ingredients in a large saucepan and bring slowly to boil. Simmer gently and stir every now and then to prevent sticking. Cook for about 30 minutes till mushy. Mash, or liquidise with a hand blender. Soup should be thick.
