    About this recipe: A savoury Charlotte with bread, Cheddar and asparagus. You can make it with tinned and fresh asparagus. Both versions taste great to me.

    Serves: 4 

    • 4 to 5 slices buttered bread
    • 300g (10 1/2 oz) tinned asparagus, or fresh asparagus
    • 100 to 170g (4 to 6 oz) grated Cheddar cheese
    • 3 eggs
    • 450ml (3/4 pt) milk
    • 1 teaspoon mustard
    • seasoning to taste

    1. Lightly butter a 1.5-1.8L oven dish.
    2. Trim crusts from bread and line dish with a layer of bread, then the asparagus. Sprinkle with half the cheese and cover with the remaining buttered bread and cheese.
    3. In a bowl beat eggs well, add milk, mustard and seasoning. Pour into the dish and allow to stand for 15 minutes.
    4. Preheat oven to 190 C / Gas 5.
    5. Bake for 45 to 50 minutes until golden brown. Serve hot with freshly cooked vegetables.
