About this recipe: Delicious fried potato fritters - golden brown and crisp on the outside and smooth and soft on the inside. You can season them any way you wish - use different herbs, spices and cheese, if desired.

Serves: 4 

  • 350g (3/4 oz) cooked potatoes
  • 2 eggs, separated
  • 2 tablespoons cream
  • 25g (1 oz) grated Parmesan cheese
  • cayenne pepper
  • 1 pinch chopped parsley
  • 1 pinch curry powder
  • salt and pepper to taste
  • oil for deep frying

  1. Pass potatoes through a potato ricer or sieve; keep warm. Beat egg yolks, add cream. Mix with potatoes, cheese, cayenne, parsley, curry powder and seasoning. Beat egg whites until stiff and fold in.
  2. Heat oil for deep frying and drop mixture into hot fat from a spoon and fry till crisp and golden brown.
