These tasty vegan burgers are made with millet grains, grated carrots, ground nuts and seeds. The burgers are flavoured with garlic, ginger and curry powder and I can testify that they are loved by vegetarians and meat-lovers alike!

Ingredients
Serves: 4
1 tablespoon vegetable oil, plus more for frying
200g millet grains
820ml vegetable stock or water
220g grated carrots
1 grated garlic clove
65g wholemeal flour
85g milled nuts and seeds
1/2 teaspoon ground ginger
1/2 teaspoon curry powder
1/2 teaspoon salt

Heat oil in a heavy-based pan; add millet and stir to toast. Pour in stock and simmer for 15 minutes, or until liquid is absorbed.
Mix cooked millet with grated carrots and garlic; stir in flour and milled nuts and seeds. Season mixture with ginger, curry powder and salt.
Form mixture into 4 veggie burgers; fry in hot oil in an even layer until golden brown on one side, about 2 minutes. Flip burgers over and cook on other side until golden; serve warm.
