Quick cheese and onion pizza

    This quick pizza has a cheesey base that is made without yeast so it doesn't need any time for proofing. Red onion and grated cheese make a quick and easy topping.

    Serves: 2 

    • Pizza base
    • 100g self raising flour
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon baking powder
    • 100g grated Cheddar cheese, divided
    • 25g butter
    • 1 beaten egg
    • Topping
    • 4 tablespoons tomato passata, or to taste
    • 1 red onion, very thinly sliced
    • pinch of dried basil or Italian dried herbs

    1. Preheat oven to 180 °C / Gas 4.
    2. Combine self raising flour, salt, pepper and baking powder together in a bowl; rub in butter until the mixture resembles breadcrumbs. Stir in half of the grated cheese and beaten egg; shape into a ball.
    3. Roll dough out on a lightly floured surface; transfer onto prepared baking tray. Spread tomato passata on top and cover with thinly sliced red onion and remaining grated cheese. Season with dried basil or Italian herbs; bake in preheated oven for 20 to 30 minutes.
