    About this recipe: This meat free mince is made with walnuts, onion and breadcrumbs. Season it up with some herbs and tomato or mushroom ketchup and serve on toast. Or double up on the quantities if you need enough to make a vegetarian bolognese or a vegetarian cottage pie.

    Serves: 2 

    • 1 teaspoon butter
    • 50g chopped walnuts
    • 1 large onion, chopped
    • 75g brown breadcrumbs
    • pepper and salt to taste
    • 1 pinch mixed herbs
    • 1 tablespoon tomato ketchup, mushroom ketchup or Worcester sauce
    • 140ml (1 gill) water or more

    1. Melt butter in a frying pan. Fry chopped nuts and onion till lightly browned. Add breadcrumbs, seasonings and water. Simmer for 30 minutes.
