About this recipe: An easy rhubarb pie, perfect for anyone without a kitchen scale. You can measure the ingredients with tea cups!

Makes: 1 Pie

  • 2 to 3 teacups chopped rhubarb
  • 1 teacup sultanas
  • 2 tablespoons melted butter
  • juice and zest of 1 lemon
  • 2 tablespoons dried breadcrumbs
  • 1 beaten egg
  • sugar to taste
  • 2 sheets shortcrust pastry

  1. Preheat oven to 200 C / Gas 6.
  2. Line a flan tin with one sheet of pastry.
  3. Mix together the rhubarb, sultanas, butter, lemon zest and juice, breadcrumbs and egg. Sweeten to taste and place on top of pastry. Cover with pastry lid, cutting away any excess pastry. Pinch the edges to seal, and cut a few slits in the lid to let steam escape.
  4. Bake for 30 minutes in the preheated oven, or until pastry is golden brown. Cool before slicing.
