Rich potato and bacon soup

    You've never had a potato soup so creamy and rich! This soup is the perfect belly warmer after a nice long walk on a cold winter day.

    Serves: 4 

    • 6 medium potatoes, peeled and diced
    • 150g butter
    • 85g flour
    • 1.6L milk
    • 225ml soured cream
    • 250g grated Cheddar cheese, or to taste
    • 6 to 8 rashers cooked bacon, crumbled
    • 1 teaspoon salt, or to taste
    • 1 dash pepper
    • 1 teaspoon dried basil
    • a few coriander leaves, finely chopped

    1. Boil the potatoes in a saucepan with salted water for 15 to 20 minutes. Once tender, drain.
    2. Mix the butter and flour together in a pan on medium heat until well blended and bubbly. Add the milk. Whisk until it thickens and just starts to boil. Turn heat off.
    3. Add the drained potatoes and all remaining ingredients to the milk mixture, and stir well. Heat for a few minutes. Decorate with a few coriander leaves to serve.
