This is the recipe for aromatic chicken biryani from my mum. I loved coming home from school to the beautiful scent of ginger and garlic.

150g onion, chopped
8 whole green chillies
100ml oil or ghee
3 tablespoons ginger paste
3 tablespoons garlic paste
salt to taste
4 to 5 medium tomatoes
20g chicken biryani seasoning mix
450g chicken, cut into medium sized pieces
500g basmati rice, rinsed well
raita, to serve

Fry the onion and green chillies in oil until the onion is golden brown. Add the ginger, garlic paste and salt. Fry for a couple of minutes. Add the cut tomatoes and biryani seasoning, and fry for a few minutes. Add the chicken and cook for 5 to 10 minutes.
Add washed rice and water and cook until the rice is tender. Stir continuously. Remove from heat and serve with raita.
You can find biryani seasoning in some larger supermarkets or in Asian shops.
