Super easy vanilla sponge

    My mum's friend gave me this fool-proof recipe. This tasty sponge is always moist and always well risen.

    Makes: 1 cake

    • 100g (4 oz) self-raising flour
    • 100g (4 oz) caster sugar
    • 100g (4 oz) butter/margarine
    • 2 large eggs
    • 1 teaspoon baking powder
    • a few drops vanilla essence

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 C / Gas 4.
    2. Combine ingredients in a mixing bowl, using an electric mixer on medium speed. If the dough is too thick add a couple teaspoons of warm water.
    3. Put into cake mould or tin and bake for 20 to 25 minutes, until a skewer inserted in the centre of the cake comes out clean.

    I have made this sponge for the first time for my nieces birthday' it was so easy and taste delish, I made 2 because I wanted a taller cake, will let you know what everyone else thinks, it was light but strong enough to decorate, will put a pic up now and another when she cuts it, thank you very much I will be using this recipe everytime  -  24 Sep 2014


    You could bake the cake (2 tiers), then after it's cooled you could cut a 5cm deep crater in the top and bottom of the cake, then fill it with smarties and ice it etc... Like this:  -  17 Apr 2014
