Makes: 1 cake
- 100g (4 oz) self-raising flour
- 100g (4 oz) caster sugar
- 100g (4 oz) butter/margarine
- 2 large eggs
- 1 teaspoon baking powder
- a few drops vanilla essence

- Preheat oven to 180 C / Gas 4.
- Combine ingredients in a mixing bowl, using an electric mixer on medium speed. If the dough is too thick add a couple teaspoons of warm water.
- Put into cake mould or tin and bake for 20 to 25 minutes, until a skewer inserted in the centre of the cake comes out clean.

I have made this sponge for the first time for my nieces birthday' it was so easy and taste delish, I made 2 because I wanted a taller cake, will let you know what everyone else thinks, it was light but strong enough to decorate, will put a pic up now and another when she cuts it, thank you very much I will be using this recipe everytime - 24 Sep 2014
