About this recipe: This creamy pasta dish is a perfect supper for the whole family. It is my sons' favourite meal and they ask for it a lot.

Serves: 5 

  • 500g tagliatelle
  • 125g butter
  • 300ml single cream
  • 75g Parmesan cheese flakes
  • 250g sliced mushrooms
  • 300g cooked ham, chopped
  • salt and pepper to taste
  • fresh parsley or rocket, to garnish

  1. Cook tagliatelle in boiling water until tender but still firm. Drain well.
  2. Melt 100g butter in a heavy-based saucepan. Add single cream and warm through gently, taking care not to boil. Gradually sprinkle in Parmesan and stir until it melts and thickens.
  3. Melt the remaining butter in a separate frying pan until sizzling. Add mushrooms and fry gently for 5 minutes, turning occasionally. Remove from pan and add to the cheese sauce.
  4. Add ham into the sauce. Mix the cooked pasta and sauce together in the large saucepan until the pasta is coated. Add salt and pepper to taste, and warm through.
  5. Serve with parsley or rocket to garnish.
