Mixed vegetable pasta

    This is quick to make, healthy and full of goodness. Because it is all mashed up, kids find it easy to eat - and they don't know what's in there!

    Serves: 4 

    • 2 to 3 large handfuls fresh spinach leaves
    • 1 medium onion
    • 3 cloves garlic
    • 3 tomatoes
    • 1 each red, green and yellow pepper
    • mixed herbs, to taste
    • 1 vegetable stock cube
    • salt and pepper to taste
    • 2 tablespoons olive oil
    • 400g pasta, cooked
    • grated cheese

    1. Coarsely chop spinach, onion, garlic, tomatoes and peppers, and whizz up in a blender with mixed herbs and vegetable stock cube dissolved in a little water. Add salt and pepper to taste.
    2. When the consistency is right, cook the mixture with the oil in a pan for 15 to 20 minutes, or till thickened. Serve hot tossed with any cooked pasta, sprinkled with cheese.
