Ingredients
Serves: 4
2 to 3 large handfuls fresh spinach leaves
1 medium onion
3 cloves garlic
3 tomatoes
1 each red, green and yellow pepper
mixed herbs, to taste
1 vegetable stock cube
salt and pepper to taste
2 tablespoons olive oil
400g pasta, cooked
grated cheese

Coarsely chop spinach, onion, garlic, tomatoes and peppers, and whizz up in a blender with mixed herbs and vegetable stock cube dissolved in a little water. Add salt and pepper to taste.
When the consistency is right, cook the mixture with the oil in a pan for 15 to 20 minutes, or till thickened. Serve hot tossed with any cooked pasta, sprinkled with cheese.
