    A traditional Bangladeshi and Indian pudding that tastes even better served cold. It tastes a little bit like rice pudding and was one of the first sweet Indian dishes I learnt to cook.

    Serves: 4 

    • 1.5 litres milk
    • 200g sugar
    • 240ml single cream
    • 170g semolina
    • pistachio nuts, ground or chopped (optional)

    1. Heat milk in a saucepan for 2 minutes, stirring. Add sugar, cream and semolina. Whisk over low heat for 5 minutes. When it boils, pour into serving bowls. Sprinkle nuts over the top.
