1.5 litres milk
240ml single cream
pistachio nuts, ground or chopped (optional)

Heat milk in a saucepan for 2 minutes, stirring. Add sugar, cream and semolina. Whisk over low heat for 5 minutes. When it boils, pour into serving bowls. Sprinkle nuts over the top.
