About this recipe:
Delicious, moist coffee cupcakes! Perfect as a light snack and perfect with a cup of coffee! Use your favourite frosting and decorate to your liking.
75g butter or margarine
75g self-raising flour
1/2 and 1/4 teaspoon baking powder
1 tablespoon boiling water
1 tablespoon coffee granules

Preheat oven to 180 C / Gas 4. Put 12 medium cupcake cases in a 12-hole cupcake tin.
Beat butter and sugar until pale and creamy. This will take only a few seconds.
Lightly whisk the eggs in a mug. Gradually add them to the mixture. Add flour a tablespoon at a time whilst beating. Beat in baking powder.
Dissolve the coffee granules in boiling water and fold in gently.
Using a tablespoon, add mixture equally in the twelve cupcake cases.
Bake them in the oven for 15 minutes and let it cool for 5 to 10 minutes.
Enjoy with a nice cup of coffee! Tip
If you would rather make a cake, double cooking time to 30 minutes. Also, if you don't have any cupcake cases, grease the cupcake tins with butter or margarine.

Brilliant, but you might want to add a little extra flour because it's quite runny

and don't add extra coffee!

These were lovely!! I did double ingredients like previous reviewers had said and made 18... I don't usually eat my own cakes as my children devour them but I have had a few of these as they were so delicious!! I decorated with vanilla buttercream and chocolate sprinkles!! 😍😍😍
