Coffee cupcakes

    Delicious, moist coffee cupcakes! Perfect as a light snack and perfect with a cup of coffee! Use your favourite frosting and decorate to your liking.

    Makes: 12 cupcakes

    • 75g butter or margarine
    • 75g sugar
    • 2 eggs
    • 75g self-raising flour
    • 1/2 and 1/4 teaspoon baking powder
    • 1 tablespoon boiling water
    • 1 tablespoon coffee granules

    1. Preheat oven to 180 C / Gas 4. Put 12 medium cupcake cases in a 12-hole cupcake tin.
    2. Beat butter and sugar until pale and creamy. This will take only a few seconds.
    3. Lightly whisk the eggs in a mug. Gradually add them to the mixture. Add flour a tablespoon at a time whilst beating. Beat in baking powder.
    4. Dissolve the coffee granules in boiling water and fold in gently.
    5. Using a tablespoon, add mixture equally in the twelve cupcake cases.
    6. Bake them in the oven for 15 minutes and let it cool for 5 to 10 minutes.
    7. Enjoy with a nice cup of coffee!


    If you would rather make a cake, double cooking time to 30 minutes. Also, if you don't have any cupcake cases, grease the cupcake tins with butter or margarine.

    Brilliant, but you might want to add a little extra flour because it's quite runny Me and my family loved them and don't add extra coffee!  -  18 Oct 2014


    I like the cake taste but I only manage to make about 7 cupcakes using the same amount. Also I have baked almost 30 min.  -  10 Jan 2018
