Strawberry ice cream without an ice cream maker

About this recipe: This makes a wonderful fresh summer ice cream without eggs. Best with very ripe strawberries, when they are in season.


Serves: 4 

  • 250g fresh strawberries
  • 1 1/2 teaspoons icing sugar
  • 125ml fresh double or whipping cream
  • 100ml condensed sweetened milk
  • 30ml evaporated milk
  • 1/2 teaspoon vanilla extract

  1. Change the freezer setting to maximum/fast freeze, if possible.
  2. Blend the strawberries in a blender without adding water for 5 seconds.
  3. Add sugar to the cream, and whip with an electric whisk until it makes soft peaks. Keep aside or in the fridge.
  4. Mix condensed and evaporated milk with 3/4 of the strawberries and vanilla in a bowl.
  5. Combine the mixed milks with the whipped cream and mix well. Pour into a shallow container. Add the remaining strawberries on top, stir in slightly with a spoon. Cover.
  6. Put at the base of the freezer to set (about 4 to 6 hours). Stir every 1 to 1 1/2 hours for a smoother texture.
  7. Once set, take out 1 to 2 minutes before serving. Scoop into bowls. Add fresh strawberries and strawberry syrup to serve (optional).
