This is delicious banana cake that I serve with banana flavoured cream. Banana lovers will adore this dessert!

Makes: 1 banana cake
100g plain flour
1 teaspoon baking powder
1/4 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 large ripe banana
50g softened butter
150g caster sugar
1/2 teaspoon vanilla extract
1 small ripe banana
25g caster sugar
1/4 teaspoon grated nutmeg
150ml cream, whipped

Preheat oven to 190 C / Gas 5. Grease a 20cm (8 inch) round cake tin.
Sift flour, baking powder, bicarbonate of soda and salt into a bowl.
Blend beaten egg, chopped banana, sugar and vanilla in a blender or food processor until smooth.
Stir banana mixture into the flour mixture until just combined; spoon into prepared cake tin and bake in preheated oven for 25 minutes, or until a skewer inserted into the centre comes out clean. Turn cake out onto a wire rack to cool.
Mash banana, sugar and nutmeg together until well combined; gently fold in whipped cream and serve with the cake.
