Banana cake with banana cream

    This is delicious banana cake that I serve with banana flavoured cream. Banana lovers will adore this dessert!

    Ingredients
    Makes: 1 banana cake

    • Banana cake
    • 100g plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1 egg
    • 1 large ripe banana
    • 50g softened butter
    • 150g caster sugar
    • 1/2 teaspoon vanilla extract
    • Banana cream
    • 1 small ripe banana
    • 25g caster sugar
    • 1/4 teaspoon grated nutmeg
    • 150ml cream, whipped

    Method

      Banana cake:

    1. Preheat oven to 190 C / Gas 5. Grease a 20cm (8 inch) round cake tin.
    2. Sift flour, baking powder, bicarbonate of soda and salt into a bowl.
    3. Blend beaten egg, chopped banana, sugar and vanilla in a blender or food processor until smooth.
    4. Stir banana mixture into the flour mixture until just combined; spoon into prepared cake tin and bake in preheated oven for 25 minutes, or until a skewer inserted into the centre comes out clean. Turn cake out onto a wire rack to cool.
    5. Banana cream:

    6. Mash banana, sugar and nutmeg together until well combined; gently fold in whipped cream and serve with the cake.
