About this recipe: If you add some turmeric, it will look even nicer. Increase the quantities to serve more members of the family, or turn a side dish into a main meal by adding an array of tinned beans for protein.

Serves: 2 

  • 1 onion, diced
  • oil for frying
  • 1 large potato, peeled and chopped
  • 150g garden peas
  • other vegetables of your choice, e.g. peppers, mushrooms, tinned beans
  • salt to taste
  • 160g cooked couscous
  • garam masala

Prep:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Fry onion in oil until golden brown. Add potatoes, peas and any other chopped vegetables and cook gently until tender. Add salt to taste.
  2. Add garam masala and couscous. Mix everything together and stir over low heat for 5 minutes. Serve.
