Crack the egg shells and put the eggs into a small bowl and whisk until it is yellow. Add enough to make the egg a slightly brighter yellow and whisk.
Prepare the veg - wash and chop the mushrooms. Top and tail the onions and remove any skin. Chop finely.
Heat a frying pan and add 2 teaspoons oil. Add the chopped onions and mushrooms to the pan any fry until partially cooked.
Add this to the cold egg mixture.
Add another 2 teaspoons oil to the pan and heat. Add about 1/3 or 1/2 the mix into the pan and add some chilli on top (you can always add more if you prefer). Scramble. Add some salt and pepper to the mix if you like.
Repeat step until the egg mixture is used up.
Toast the bread enough to suit you.
Put the mixture on the bread and make a sandwich out of it. Serve.
