Custard biscuits

    The secret to these delicious biscuits is using custard powder. Kids love them and the recipe is easy enough for them to help make them. You can sandwich the biscuits together with strawberry jam or vanilla icing, if you like.

    Makes: 16 biscuits

    • 75g butter, softened
    • 40g icing sugar
    • 75g plain flour
    • 25g custard powder

    1. Preheat oven to 180 C / Gas 4. Lightly grease 2 baking trays.
    2. Beat softened butter and icing sugar together in a bowl until light and fluffy. Sieve in the flour and custard powder; mix well to form a soft dough.
    3. Divide mixture into 16 pieces; roll gently in palm of your hand to form balls. Arrange 8 balls onto each greased tray; squash each biscuit down with a floured fork.
    4. Bake in the preheated oven for 15 to 20 minutes.
