Salmon with wild garlic sauce

    This salmon dish uses wild garlic, or wood garlic, which is a wild plant that can be found in deciduous woodlands. It is closely related to chives, and has a light garlic aroma.

    Serves: 4 

    • 250g plain yoghurt
    • 150g crème fraiche
    • 1 bunch wild garlic
    • salt, to taste
    • freshly ground black pepper, to taste
    • 1 pinch cayenne pepper
    • 750g boneless skinless salmon fillet
    • juice of 1/2 lemon
    • 2 tablespoons vegetable oil

    1. In a bowl stir together yoghurt and crème fraiche. Rinse wild garlic and chop very finely. Add to the yoghurt mixture and season with salt, pepper and cayenne.
    2. Rinse salmon and pat dry. Sprinkle with lemon juice.
    3. Heat oil in a frying pan and fry the fish on both sides, until it flakes easily. Season with salt and pepper and serve with the wild garlic sauce.
