Strawberry chocolate torte

    Serves: 14 

    • For the sponge
    • 80g butter
    • 60g icing sugar
    • 4 egg yolks
    • 80g cooking chocolate, melted
    • 1 pinch salt
    • 4 egg whites
    • 60g caster sugar
    • 1 tablespoon vanilla extract
    • 80g plain flour
    • For the filling
    • 6 gelatine leaves
    • 240g puréed strawberries
    • 120g icing sugar
    • 250ml single cream
    • 100g strawberry jam
    • To decorate
    • 200ml single cream, whipped
    • chocolate shavings

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment. Draw 2 circles onto the paper with the help of a torte or entremet ring.
    2. For the filling, soak the six gelatine leaves in cold water and set aside.
    3. For the cake layers:

    4. In a bowl beat together the butter and icing sugar until creamy. Add one egg yolk at a time, stirring well after each addition. Add the melted chocolate and salt and mix well.
    5. In a clean bowl whisk the egg whites until soft peaks form. Slowly add sugar and vanilla extract and continue beating until stiff.
    6. Stir flour into the butter mixture and fold in stiff egg whites.
    7. Divide the sponge mixture between the two circles on the baking parchment.
    8. Bake for about 20 minutes in the preheated oven. Let cool down completely. Cut out perfect circles with the torte ring.
    9. For the filling:

    10. In a bowl, stir together strawberry purée and icing sugar. In a separate bowl, whisk the 250ml single cream until stiff.
    11. Squeeze any excess water from the gelatine leaves and dissolve according to instructions on the packet. Stir gelatine into the sweetened strawberry purée and then fold in whipped cream.
    12. Place the torte ring around one of the bases and spread strawberry jam on top of the base. Add the strawberry cream mixture and smooth. Add second base on top and lightly press down. Place the torte in the fridge to chill.
    13. Before serving, remove torte ring and spread whipped cream over the top and sides of the torte. Sprinkle chocolate shavings on top.


    It is easy to make your own strawberry purée, just take fresh or frozen strawberries and blend. You can push the purée through a sieve or leave if you don't mind the seeds.
