German apple pie

    This is a recipe from my German grandmother. She mixes fresh apples with apple sauce for a deliciously different apple pie.

    Serves: 12 

    • 300g plain flour
    • 90g caster sugar
    • 1 egg
    • 180g butter, softened
    • 1 tablespoon cold water (if needed)
    • butter and breadcrumbs for the tin
    • 500g apples - peeled, cored and chopped
    • 200g apple sauce
    • 1 lemon, zested and juiced
    • 80g caster sugar
    • 1/2 teaspoon cinnamon
    • Icing (optional)
    • icing sugar
    • lemon juice

    1. Mix the flour with 90g sugar in a large bowl. Add egg and butter and knead to form a dough. If needed add some cold water. Form the dough into a ball, wrap in cling film and chill for at least 30 minutes in the fridge.
    2. Preheat oven to 180 C / Gas 4 and grease a round springform tin with butter and dust with breadcrumbs.
    3. Mix chopped apples with the apple sauce, lemon juice and some lemon zest and sweeten with sugar to taste. (Use more or less than 80g, depending on the sweetness of the apples). Mix in cinnamon.
    4. When the dough is chilled, divide in half and roll out in a circular shape on a lightly floured surface. Line the cake tin with one piece of dough and top with the apple filling. Place the second piece of dough on top.
    5. Bake in the preheated oven for about 35 minutes. Let cool.
    6. If you like, you can stir together icing sugar and lemon juice and drizzle with that mixture, or you can simply dust with icing sugar.
