Easy tuna pasta sauce

    My mother taught me this recipe, and I think, it is the best pasta sauce ever. I love it with a bunch of grated cheddar cheese on top! Serve with maccaroni or any pasta of your choice.

    Serves: 4 

    • 6 tablespoons cooking oil
    • 1 clove garlic, finely chopped
    • 1 chopped red onion
    • 1/2 aubergine, chopped (optional)
    • 1 can chopped tomatoes
    • 1 tablespoon tomato puree (optional)
    • 1 teaspoon sugar
    • 1 teaspoon salt, more to taste
    • 1 can tuna, drained
    • 1 handfull fresh coriander, finely chopped
    • 1 tablespoon green pesto

    1. Put sauce pan on medium heat and add cooking oil. Add chopped garlic and onions stir fry, until golden. Add aubergine straight after, if using. Stir fry for about 30 seconds.
    2. Add the tomato puree and chopped tomatoes, sugar and salt and cover. Put on low heat and simmer for 15 minutes. Check the sauce every 5 minutes, so it does not burn.
    3. After 15 minutes, the sauce should be a bit thicker. Add the tuna, chopped coriander and pesto, stir and simmer for another 5 minutes.


    If you want it to taste even better, add 1 tablespoon of chicken stock or veg stock.
