200g tomato purée
200g tomatoes, pressed through a sieve

Heat a large frying pan and add enough olive oil to cover the bottom of the pan. Add the onion and cook and stir for about 5 to 10 minutes until browned. Turn down the heat, add garlic and cook and stir for about 30 seconds, until fragrant.
Add the tomato purée and tomatoes, turn the heat to medium-low and simmer for about 10 minutes. Let the sauce cool before using on pizza dough.
