Chicory is a winter vegetable and has a white central bulb with tightly packed elongated leaves that can be green or red in colour at the tips. Chicory is a fairly versatile vegetable in that it can be eaten raw or cooked and excellent when stir fried.
To vary the flavour, mix in fresh herbs like basil, dill, tarragon, parsley or chives.
