    About this recipe: This makes a delicious and healthy side to any dish. The butternut squash is seasoned with cumin and coriander.

    Serves: 4 

    • 1 whole butternut squash
    • olive oil
    • 1 generous pinch sea salt
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon ground coriander

    1. Preheat your oven to 180 C / Gas 4.
    2. Rinse and chop the butternut squash into medium sized chunks or slices. You don't need to peel the squash. Place on a baking tin and drizzle with olive oil. Mix with the salt and spices. Try to cover evenly.
    3. Place in the oven and roast for about 30 minutes, until tender. Delicious!
