About this recipe: This recipe for lamb's lettuce with curried beef is a great way to use up leftover beef from a casserole or roast. You can use any lean cooked cuts of beef for the salad.


Serves: 2 

  • 1 pinch brown sugar
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon fig mustard
  • 1/2 teaspoon curry powder
  • salt and pepper, to taste
  • 4 handfuls lamb's lettuce
  • 250g cooked lean beef, shredded or diced

  1. Mix together the sugar and vinegar until sugar dissolves. Mix in olive oil and mustard and season with curry powder, salt and pepper to taste.
  2. Place the lettuce in a salad bowl. Mix beef with the dressing and pour over salad. Toss and serve.


Lamb's lettuce, also known as corn salad, is best during the months of early summer through to autumn. This tasty and versatile lettuce is great in salads and has a distinctive tangy flavour. Named after its resemblance in shape and size to lamb's tongue.
Fig mustard may not be available in your local supermarket. Try searching online or in speciality shops.
