About this recipe: The sweetness of the bananas and tartness of the chicory give this salad a great balance. Serve immediately, as the bananas tend to get brown quickly.


Serves: 3 

  • 3 chicories
  • 2 bananas, peeled and sliced
  • 2 tablespoons flaked almonds
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • salt and pepper, to taste
  • caster sugar, to taste
  • 1 pinch curry powder

  1. Remove the bitter stalks from the chicories with a small knife. Shred the leaves and place into a salad bowl. Add the banana and mix.
  2. In a dry frying pan, toast the almonds until browned and fragrant.
  3. Whisk together the lemon juice, olive oil, salt, pepper, sugar and curry powder. Pour over the salad and toss to coat. Sprinkle with almonds and serve immediately.
