Apple pineapple fool

    In the wintertime, I make fool with apples and pineapple, it's light and refreshing.

    Serves: 6 

    • 100g raisins
    • 2 tablespoons rum
    • 6 tart apples
    • lemon juice
    • 1 (100g) bag flaked almonds
    • 250ml whipping cream
    • 50g caster sugar
    • 1 (432g) tin pineapple chunks, drained

    1. Add raisins to a small bowl and drizzle with rum. Set to one side.
    2. Peel, core and slice apples thinly. Drizzle with lemon juice immediately so they won't turn brown. Let marinate for 15 minutes.
    3. Toast almonds in a non greased frying pan till lightly browned. Remove from hob and let cool.
    4. Whip cream till stiff, gradually adding the sugar. Fold in drained pineapple and apple slices, then fold in almonds and soaked raisins. Chill till serving.
