    About this recipe: These simple oat biscuits are great at any time of the year and perfect with afternoon tea or coffee. Vary these biscuits by adding raisins or desiccated coconut.

    Ingredients
    Makes: 48 biscuits

    • 200g butter
    • 200g caster sugar
    • 1 packet vanilla sugar
    • 1 egg
    • 250g rolled oats
    • 100g plain flour
    • 1 teaspoon baking powder

    Method

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. In a mixing bowl cream the butter, sugar and vanilla sugar until light and fluffy. Stir in the egg.
    3. In a second bowl combine the oats, flour and baking powder and fold into the butter mixture. Mix well.
    4. Spoon little heaps of the oat mixture onto the prepared baking tray. Leave a good amount of space between biscuits, as they will spread out while baking.
    5. Bake in the preheated oven for 10 minutes until golden. Remove from the oven and allow to cool before serving.

    Vanilla sugar

    Vanilla sugar may not be available in your local shops. In a pinch, substitute one sachet vanilla sugar for 1 to 2 teaspoons vanilla extract.
