About this recipe: Want a lighter than air dessert that's virtuous, too? Yoghurt mousse is your answer! Use different flavours of yoghurt for a different version every time.


Serves: 4 

  • 450g plain yoghurt
  • 100g caster sugar
  • juice of 3 lemons
  • 6 leaves gelatine
  • orange juice, for soaking
  • 400ml single cream
  • fresh berries, for decorating

  1. Whisk the yoghurt and sugar together in a bowl. Stir in lemon juice.
  2. Soak gelatine in orange juice, and dissolve according to instructions on the packet. Add to the yoghurt mixture and mix well. Let cool.
  3. Meanwhile whisk the cream until stiff and fold into the yoghurt. Cover and chill in the fridge for 4 to 6 hours, or until firm. Serve with berries.
