Tuna and courgette sandwich

    This sandwich with tinned tuna and pan fried courgette is quick to make and very flavourful. Toasting the bread before assembling the sandwich gives an added satisfying crunch.

    Serves: 1 

    • 2 teaspoons olive oil
    • 1/2 courgette, diced
    • 1 tin tuna, drained
    • 1 tablespoon mayonnaise
    • 1/4 teaspoon turmeric
    • 1/4 teaspoon cayenne pepper
    • salt and pepper, to taste
    • 1 french bread roll, halved
    • 1 teaspoon prepared mustard
    • 1 large tomato, sliced

    1. Heat the olive oil in a frying pan and cook and stir courgette until soft.
    2. Remove from the pan and mix together with tuna, mayonnaise, turmeric and cayenne in a bowl. Season with salt and pepper to taste.
    3. Spread mustard over the lower half of the roll and layer with tomato slices. Top with the tuna mixture and sandwich with the upper half of the roll.
