Preheat oven to 200 C / Gas 6. Grease a baking tray.
Place tomatoes with the cut side up on the baking tray.
In a small bowl whisk together olive oil, garlic, herbs, salt and pepper and spread the mixture evenly over the tomatoes. Sprinkle with Parmesan cheese.
Bake the tomatoes in the preheated oven for 15 to 20 minutes, until the tomatoes are soft and the Parmesan cheese is melted.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
