Parmesan and lime kale crisps

    These divine kale crisps are drizzled with olive oil and cooked in the oven until light and crunchy. They are just as addictive as traditional crisps, but healthier.

    Serves: 4 

    • 1 bunch kale
    • 2 tablespoons olive oil
    • 1/2 teaspoon salt
    • 1 teaspoon brown sugar
    • 1/2 lime, juiced
    • 50g Parmesan cheese, grated

    1. Preheat oven to 180 C / Gas 4.
    2. Remove the stalks and thicker veins from the kale and rip the kale leaves into smaller pieces. Place into a bowl, drizzle with olive oil and mix with salt and sugar. Transfer the kale to a large baking tray.
    3. Bake in the preheated oven for about 12 minutes until crisp. After 5 minutes, flip the leaves over.
    4. Remove the kale from the oven, place into a bowl and drizzle with lime juice and top with Parmesan cheese.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
