Preheat oven to 180 C / Gas 4.
Remove the stalks and thicker veins from the kale and rip the kale leaves into smaller pieces. Place into a bowl, drizzle with olive oil and mix with salt and sugar. Transfer the kale to a large baking tray.
Bake in the preheated oven for about 12 minutes until crisp. After 5 minutes, flip the leaves over.
Remove the kale from the oven, place into a bowl and drizzle with lime juice and top with Parmesan cheese.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
