About this recipe:
This is a soft and slightly sweet cornbread, great as an accompaniment to a variety of creole dishes and a side dish must should you be cooking southern American cuisine.
125g plain flour
1 tablespoon baking powder
1 pinch salt
1 tablespoon caster sugar
50g butter, melted
- Preheat the oven to 200 C / Gas 6. Grease a 20cm square baking tin.
- In a bowl mix together the cornflour, flour, baking powder, salt and sugar.
- In a second bowl whisk the egg, add butter and milk and stir well. Add egg mixture to the dry ingredients and quickly stir together. Pour mixture into the prepared baking tin.
- Bake cornbread for about 20 minutes in the preheated oven, until a skewer inserted in the centre of the bread comes out clean.
