About this recipe: This is a soft and slightly sweet cornbread, great as an accompaniment to a variety of creole dishes and a side dish must should you be cooking southern American cuisine.

Serves: 8 

  • 170g cornflour
  • 125g plain flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 tablespoon caster sugar
  • 1 egg
  • 50g butter, melted
  • 250ml milk

  1. Preheat the oven to 200 C / Gas 6. Grease a 20cm square baking tin.
  2. In a bowl mix together the cornflour, flour, baking powder, salt and sugar.
  3. In a second bowl whisk the egg, add butter and milk and stir well. Add egg mixture to the dry ingredients and quickly stir together. Pour mixture into the prepared baking tin.
  4. Bake cornbread for about 20 minutes in the preheated oven, until a skewer inserted in the centre of the bread comes out clean.
