    Makes: 24 cupcakes

    • Vanilla mixture
    • 120g butter
    • 120g caster sugar
    • 120g self raising flour
    • 2 large eggs
    • Chocolate mixture
    • 120g butter
    • 120g caster sugar
    • 120g self raising flour
    • 2 large eggs
    • 1 tablespoon cocoa powder

    Prep:20min  ›  Cook:15min  ›  Ready in:35min

    1. Preheat oven to 170 C / Gas 3. Line two 12 holed muffin tins.
    2. Beat 120g of butter and 120g of sugar into a bowl until light and fluffy. Add 2 large eggs and combine until smooth. Sift in the flour and fold the mixture together.
    3. In a separate bowl repeat step 2, adding the cocoa powder at the end.
    4. Divide the mixture into the paper cases. You should add a teaspoon of vanilla mixture, then a teaspoon of cocoa mixture and repeat until you are satisfied with the amount in the cases.
    5. With a knife gently make a figure of 8 motion in each case to make the batter blend together.
    6. Bake for 15-20 minutes until the top of the cupcakes spring back and a skewer comes out clean when inserted in the centre.

Halve the ingredients if you want to make less as it does make 24 cupcakes. Add as much or as little of each mixture as you like.

This recipe is great, I added vanilla paste to the plain mixture and a bit more cocoa to the chocolate mixture,I made 16 cupcakes and 12 smaller cakes....they are yummy  -  21 Jun 2014

Easy to make, but it tasted a bit plain. Maybe more cocoa powder or adding some vanilla essence should do the job.  -  16 Apr 2014
